The roastery

Cordova is a family name.

This is a one-family operation in a McKinney garage. The centerpiece is a 2019 Mill City Roasters 2 kg drum roaster that runs on propane, with a gauge you watch and beans you listen to. Every batch is roasted after the orders are in, then bagged and labeled by hand.

We buy green coffee in small lots, which lets us chase a single great farm instead of blending to a house flavor. Members of the coffee club vote on what we roast next.

Questions

Good to know

Why can't you ship?

We operate under the Texas cottage food law, which allows online orders only when the food is delivered in person by the operator or their household. Shipping isn't allowed, so all orders stay local.

Whole bean or ground?

Whole bean stays fresh longest. If you don't have a grinder, choose your brew method at checkout and we'll grind for it.

How fresh is it?

Your coffee is roasted on Friday and handed to you that weekend. It tastes best from about four days to four weeks after roasting.

How does the club vote work?

Each quarter, members get a ballot of three green coffees. Votes are anonymous and each member gets one. The winner is roasted for everyone, and the results are posted here.

Is your kitchen inspected?

No. Cottage food operations in Texas are exempt from licensing and inspection, and every label says so. The operator has completed an accredited food handler course.
